Stuffed French Toast

8 slices French bread 1 ½” thick
2 Tbsp soft butter
8 ounces breakfast sausage-cooked, drained & crumbled
1 cup shredded Swiss cheese
2 eggs
½ cup milk
1-½ tsp sugar
¼ tsp cinnamon
*Cut pocket into crust of each slice of bread. Butter inside of pockets. Toss cooked sausage with cheese and stuff into pockets. In shallow bowl, beat eggs, milk, sugar and cinnamon. Dip both sides of bread. Cook on greased, hot griddle until brown on both sides. Serve with maple syrup.
