Brunch Casserole #1

12 eggs, beaten
½ cup chopped onion
½ cup green pepper
2 large packages hash browns, thawed
1 cup milk
salt & pepper
1 cup cheddar cheese
2 cups ham or bacon
½ cup black olives
4 oz can mushrooms
*Mix together. Refrigerate overnight. Bake in 9x13” pan at 325˚ for 1 hour.
