Spud Muffins
Looking for a way to use up extra mashed potatoes? Try this tasty trick. Sprits a muffin pan with nonstick cooking spray, add the potatoes and top with sautéed onions, crumbled bacon, parmesan cheese, pepper and butter. Slide the pan into a 400˚ oven and bake for 15-22 minutes. These “potato muffins” are best served warm from the oven.
